HOW TO STYLE YOUR EASTER AFTERNOON TEA PARTY

This Easter 2020 is a unique one for everyone around the world. Most of us are in quarantine, shelter in a place or some other form of lockdown. Here in Melbourne, we were not allowed to gather together even with our families if we don’t live together. But we still managed to make our Easter Sunday so very special. Here, I want to share what it takes to throw a high tea at home, and style the perfect Afternoon Tea Party Decor. Let your home turn into that favorite scene from Alice and Wonderland.

 

The Art of Floral Arranging

You can never have too many flowers! This is where you can add some bespoke charm to your party decor. I mixed grocery store finds like roses and carnation and foraged branches you might find on a neighborhood walk. Make sure to ask the homeowner before you snip something from her yard! I made a big bouquet that stands out and then made 2 mini bouquets that will compliment it. Whatever flowers you chose, sticking to your color pallet is the key.

 

Tea Cup Flower Vases

Happen to have a china set lying around? Put the pieces to good use as unique storage vessels for the mini-mini bouquets. I like to add them to the 3 tier high tea stand to add color.

 

Tea and Cake

This time I prepared small finger sandwiches (crusts off), tiny pies, all served on tiered cake displays which gives the magic to the table. Sweet treats in style with fluffy pastries and a fruit salad is always refreshing to have.

Also quiche, Mini cupcakes, macarons and scones, conserves and cream is the classic way to go!

 

 

RECIPES

Cucumber Sandwiches

Ingredients

  • 200g cream cheese softened
  • 3 tablespoons mayonnaise
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon chopped fresh chives
  • 1/4 teaspoon garlic powder
  • salt & pepper to taste
  • 1 long English cucumber thinly sliced
  • 1 loaf sliced bread crusts removed

Instructions

  • With a hand mixer mix cream cheese and mayonnaise in a small bowl until smooth. Stir in herbs, garlic powder and salt and pepper to taste.
  • Spread bread slices with cream cheese mixture.
  • Thinly slice cucumbers. Layer over half of the bread slices. Top with additional herbs if desired.
  • Top with remaining bread slice, remove crusts if desired and cut each sandwich into 3 pieces.
  • Serve immediately or cover and store up to 24 hours.

 

Beetroot and Almond Cream Sandwiches

Ingredients

  • 500g of beetroot boiled or roasted with rosemary
  • 50g of almonds
  • 125ml of olive oil
  • 2 garlic cloves
  • 1/2 lemon juice and half zest
  • 1/2 clementine, juice only
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon honey
  • 1/2 teaspoon salt

Instructions

  • Pre-heat the oven to 180 degrees
  • Put the almonds in a baking tray, drizzle over 1 tbs olive oil and a generous pinch of salt. Shake to coat. Put the tray in the oven and cook for 8-10 minutes, or until they are toasted
  • Boil/ Roast the beetroot with rosemary, individually wrapped in foil or in a large pan, until tender
  • Remove the outside skin from the beetroot, slice in half and blitz the beetroot with the remaining ingredients until it reaches your desired texture
  • Spread bread slices with beetroot cream mixture.
  • Layer over half of the bread slices.
  • Top with remaining bread slice, remove crusts if desired and cut each sandwich into 3 pieces.
